You Can Eat the Foods You Enjoy While on the South Beach Diet

by Linda Miller

One of the first things anyone ever notices when checking out a diet menu to see if they think they can do it is the “can haves” and the “cannot haves”. You will soon form the opinion that you will not go far with a diet when it is unvaried and boring and all the things you would normally enjoy eating are off the menu. This however is not the case with the South Beach Diet.

When you take a look at the South Beach Diet you will be delighted to see that both the allowed and the forbidden foods are in fact varied in an interesting way and you will feel confident that you can use the “can haves” to come up with some super meal choices.

The diet has taken into account the fact that the majority of people enjoy eating meat of some description. Foodstuffs such as boiled ham, chicken breasts, Cornish game hen, lean cuts of beef and turkey feature on the list of items you can eat, even during Phase 1 when there is more concentration on cutting out bad carbohydrates and saturated fats.

The South Beach Diet is Mecca to the seafood lover. Eating the fruit of the sea is encouraged on all phases of the South Beach Diet, and you are especially reminded to eat fish that offer up high amounts of omega-3 fatty acids, like cod and mackerel.

Phase 1 of the South Beach Diet takes carbs out of your system, and this means no fruits and grains for two weeks. While this may sound strict, your body will thank you for eliminating these foods that hamper digestion and prevent healthy weight loss. In Phase 2, you will begin eating some carbs again in a healthier way that will still help you lose weight.

Fatty cheese and other dairy products are reintroduced to your diet during Phase 2 too. Cravings for these foods are also put in check during Phase 1, so you will find it easier to refrain from overeating these foods.

South Beach Diet menus encourage you to eat a wide variety of healthy green veggies, and this helps avoid boredom and introduces you to even more new ways of eating that are healthy and promote weight loss. For a delicious dinner, try a small portion of meat paired with two or three vegetables like asparagus, cauliflower or collard greens. Or munch on some celery when you want a little snack. You will be surprised at how satisfying this can be.

One of the great things about the South Beach diet is the delicious food combinations. Adding romaine lettuce or spinach to some of the meats and cheeses approved for Phase 1 will give you a smashing salad that will be satisfying and very filling.

The variation of the menu is one of the main reasons that the South Beach Diet is both popular and successful. You will be pleasantly surprised to discover that there are lots of food choices on the menu which you would normally eat so take a look at the South Beach Diet and see how following this plan can work for you.

How To Make A Great Salad Nicoise

Wednesday 18 June 2008 @ 7:25 am
by Kerris Samson

A Salad Nicoise is more commonly referred to as a Nicoise Salad with the Nicoise being pronounced as “ni-suaz”. This particular salad originates from the Nice region of France and consists of a number of different ingredients the details of which we provide below. However there are some restaurants which although offer a Salad Nicoise it is not what would be considered to be the classic version. Often they will include rice, potatoes, pasta, cheese or cooked vegetables into their recipe.

But the real beauty of this salad is that not only is relatively easy to prepare and make but the way in which the ingredients are presented. Not only does it contain lots of color and texture but it is full of flavors which combine well together. Below we list the ingredients as well as provide step by step instructions so that you can have a go at making this particular salad for yourself.

In order to make this salad you need to get together the following ingredients which are sufficient to make enough for 4 people to enjoy. 1. Ten large ripe tomatoes 2. One clove of garlic 3. One large cucumber 4. One each of the following:- Green and Red Peppers 5. Six spring onions 6. Twelve anchovy fillets which come in a tin of olive oil 7. 125 grams black olives 8. Four eggs that need to be cooked by being boiled 9. 90 milliliters of extra virgin olive oil 10. One tablespoon of red wine vinegar 11. The juice of one lemon. The above three ingredients will be used to make the dressing for the salad. 12. A number of different salad leaves along with a good handful of fresh basil. Once you have the ingredients you can now get on with making the salad using the steps we provide below.

Step 1 - You should take the tomatoes and cut them into six pieces each and then put this on a dish before sprinkling with a little salt. Doing this will help to remove some of the excess juices in the tomatoes which could cause the salad to become soggy and limp. Whilst you are preparing the tomatoes it is good idea to also get the eggs ready. In order to get good hard boiled eggs you should aim to leave them in the boiling water for around 5 minutes.

Step 2 - You need to now take the cucumber and cut it in half down its complete length. After cutting in half take a spoon and scoop out as many of the seeds inside. Once you have removed as many of the seeds you need to then slice each half of the cucumber which has not been peeled up. Make sure that each slice you cut is not to thin or thick. After you have finished preparing the cucumber you can now slice up the peppers and the spring onions. It is best if you can slice these two ingredients for the salad as thinly as possible.

Step 3 - Take the garlic clove remove the outer layer and then cut this in half and rub them around the inside of your salad bowl. If you are able to use a wooden bowl for placing the salad in.

Step 4 - Once you have rubbed the bowl with the garlic clove now you can start to take the ingredients and place them into it. First off get the salad leaves (which you will have washed and removed any excess water from) and lay these in the bottom of the bowl(s). Next on top of the leaves you lay the tomatoes followed by the eggs which have been cut into quarters. After the eggs you now need to lay on the slices of cucumber, spring onions and peppers and then on top of these you lay the anchovy fillets before you scatter over the olives.

Step 5 - The final thing you need to do before you can serve the Salad Nicoise to family or guests is make the dressing. In order to do this you take the lemon juice, olive oil and red wine vinegar and place in a bowl or jar before adding a small amount of freshly ground black pepper and salt to season. Once all the ingredients are together mix until well combined and then very slowly drizzle it over the salad. Finally take the fresh basil leaves and tear them up into pieces and sprinkle over the top of the salad. It really is that simple to make a great tasting Nicoise Salad.

A Dull Knife in Your Kitchen Makes You a Bad Cook!

Tuesday 17 June 2008 @ 11:43 pm
by Robert Cooksey

A knife that costs a lot isn’t necessarily one that’ll do the best job. Knives that aren’t kept in good condition will be hard to cook with, even if they’re top of the line. Having the right knives and keeping them in the best possible shape is an important part of running things efficiently and avoiding accidents in the kitchen.

Every cook should have a good chef’s knife. A chef’s knife has a large handle, and blade that’s wide at the base but tapers to a point. These can be used for almost all your kitchen tasks, and it’s not really worth it to get a full knife set. Instead, invest in a single good chef’s knife that will hold an edge, and keep it good and sharp.

However, not all chef’s knives are the same. They come in a variety of different sizes, which are measured by blade length. The smallest all purpose knife you should buy is about eight inches long (without the handle). While you might think a small knife is easier to handle or safer, it’s not necessarily. You can use a large knife to cut smaller objects, but a small knife won’t work for large ones.

There’s a bewildering variety out there, as even the above eight inch chef’s knife can be found in versions costing between fifteen dollars and more than a hundred fifty. People on a budget should avoid the cheapest knives and settle on one that’s about twenty-five dollars. Look for a significant overhang below the handle to help you keep your knife sharp.

Many people think expensive knives keep an edge longer. However, if you cut a sturdy vegetable, chances are the edge will need a touch up, no matter how good your knife might be. On a daily basis, use a steel for edge straightening. This is the long stick that comes with many knife sets, and it was traditionally made of steel, though many are now made of diamond or ceramic. When you use this, swipe each side of the knife down the steel at about a twenty degree angle. If you’re not comfortable deciding what that angle looks like, you also have some other options.

Knife and tool sharpeners come with their own built in angles. They’ll help you straighten your knife without needing a lot of skill. Just hold the knife edge up, with the tip hanging off the edge of the counter. Swipe the sharpener over that edge several times, and you’ll find the edge is a lot keener than when you started. However, you should keep in mind that this type of sharpener shortens the life of your knife. It takes metal off the edge of the blade, but a sharp knife for a few years is still better than a dull one for life.

No matter how you sharpen your knives, be sure to wash and dry them both before and after sharpening. Once you get used to having a sharp knife, you’ll know right away when yours is losing its edge. Suddenly, cutting becomes a lot more difficult. One easy test is sliding your knife along a peach or tomato, exerting no pressure. If the knife is sharp, it’ll pierce the skin right away.

A knife should always be treated carefully if you want to preserve its edge. Never use cutting boards of glass, granite, or other hard materials. Wood and plastic are better. The edge should be preserved from damage by immediate washing and drying after use. Store your knife somewhere out of the way of other dishes, so it’ll stay in good shape.

Healthy, Delicious Seafood - Easy To Prepare

Tuesday 17 June 2008 @ 2:59 pm
by Shannon Linnen

Considering the latest dieting crazes, seafood has in place in most of them. This is because seafood has nearly miraculous nutrition powers. To put it succinctly, whatever anyone says, seafood is healthy. Well, with some caveats: seafood fished from polluted rivers, city rivers, or contaminated lakes are far from healthy — they may contain PCBs, mercury, or other harmful chemicals. But across the board the fish, shellfish and crustacean dishes you can find at restaurants or supermarkets near you all are nigh-guaranteed to do your body good. One way to ensure the highest of quality when obtaining your seafood is to purchase from a reputable online vendor. They can have your seafood shipped overnight from a coastal location where freshness is guaranteed!

Their entire body is lean muscle, the delicious seafood fillets that wind up on your plate. One of the reasons that seafood is healthy has to do with the biochemistry and lifestyle of the fish. Fishes, in order to breathe, must swim constantly.Compared to the chubby unattractive cow, the life of a fish is one constant streamlined marathon.

The simplest way to prepare salmon, for example, is to rub it with some spice - simply salt and pepper will do - and pan fry it in a quarter-sized drop of olive oil. 6 minutes on the skin side first, then 3 to 4 minutes on the flesh side should cook an average-sized salmon fillet through. A side benefit to eating healthy seafood is that it is so delicious and simple to prepare. Unlike unpleasant “healthy” choices like algae goo and grass juice, seafood tastes wonderful. You can’t go wrong preparing fish dishes.

Serve it with sautee’d or steamed vegetables, and you’ve got a healthy and filling meal. Lobster meat can by steamed by boiling lobsters in the shells, but dealing with fresh live lobster can be unnerving, and the best addition to lobster is drawn butter - not as healthy as pan seared salmon.

Another healthy substitution is to grill tuna steaks instead of greasy hamburgers, at your outdoor grill party. They prepare exactly the same way. Your guests will agree that seafood is healthy, and it also seems classier than humdrum burgers, when arranged on nice plates with a colorful garnish - maybe grated carrots and a lemon wedge.

The healthful features of seafood are the magical omega-3 fatty acids, found mostly in salmon, and reputed to clear up skin problems like acne, rosacea, and age lines. Also “good” cholesterol and “good” fat, and a number of essential vitamins. Fish is important for many near-vegetarians, who rely on fish for protein. These vegetarians are far healthier than those who eat no meat at all.

To conclude, fish is utterly beneficial to your health. It is full of substances that are good for you, and unless the fish is from some unsavory source, it is free of substances that are bad for you.Eat some fish today, I know I will.Fish can be prepared very easily, and it takes little seasoning to make seafood taste good. Fish also has the added benefit of being classier than red meat or poultry.

As recently as 5 to 7 years ago, finding good quality seafood for people living far away from the coast was almost impossible. The good news is that this is no longer the case. You can now get very good quality seafood sent straight to you, even if you life in Utah or Arizona. Fedex and UPS both offer overnight delivery so when you choose an online seafood vendor make sure they offer this shipping option. If your not sure where to start, just search for Quality Fresh Seafood, they are an excellent choice.

Grilled Basa Fish - How to do it

Tuesday 17 June 2008 @ 11:24 am
by Andrew White

Basa fish is part of the larger catfish family. The body of a basa fish is stout and heavy. The rounded head is broader than it is long, the blunt snout having a white band on its muzzle. Basa fish has a milder and more delicate taste than other catfish. The basa fish also give less fishy smell than other fish does.

Basa are native to the Mekong River Delta in Vietnam and Chao Phraya basin. The basa fish are important food resource with an international market. The basa fish has grown more popular in the western market the later years. It is now available in many supermarkets. Since the basa fish is an imported fish you will most often buy it frozen.

Basa fish is grilled much like salmon. You can brush it with butter and add some spices to increase the taste experience. White pepper and garlic is good. Lemon is also a tasty ingredient to add to the basa fish. You can also use lime.

After you have spiced it up and prepared it for the grill you should pack it in aluminum foil. Just take a sheet of aluminum foil and wrap it around the basa fish filet. You are now ready to grill the basa fish.

When it comes to how long you are supposed to grill the basa fish, people have different opinions. It all depend on how well grilled you want it to be. I typically grill on each side for 10 to 15 minutes or until it flakes. There is no need to turn the fish around all the time. Lay it on one side for 10 minutes and then turn it around for an aditional 10 minutes.

I hope you got the main idea on how to grill basa fish. The rest is now up to you. You can buy basa fish in several supermarkets, and you can test new ingredients and spices if you want to.

What’s on the Menu of the South Beach Diet?

Monday 16 June 2008 @ 5:04 pm
by Linda Miller

If your idea of a diet is an eating plan which will allow you to make healthy choices about the food you eat, you no doubt will have been disappointed on more than one occasion in the past. There are numerous diets where you are so restricted, you just end up craving for those things on the “forbidden” list, and your chance of succeeding at losing those surplus pounds is practically non-existent.

Fortunately, that is not the case with the South Beach Diet. Contrary to other diet plans, the list of foods you can eat on the South Beach Diet is much longer than the list of foods you must avoid.

The South Beach Diet does not forbid the foods you really enjoy; it just teaches you to eat them in a different manner. This is why it is so successful. For example, if you are a meat eater, you will not be expected to totally cut out red meats in particular - you just have to learn to eat the leaner cuts and in smaller portions.

Examine Phase 1 of the South Beach Diet, as this is the most restrictive - and usually the most difficult - part of the diet. You will be surprised to see that many foods you would not expect to eat - the ones other diets make you eliminate - are actually a part of the Phase 1 menu.

Even though Phase 1 has the most limited food list on the South Beach Diet, you are still able to enjoy some of your favorites. It’s ok to eat beef, pork, poultry, eggs, low-fat lunch meat and low-fat or fat-free cheese, as long as you stay away from anything too fatty or greasy. Seafood is not only allowed, it is encouraged throughout the entire South Beach Diet program. You can even eat sweets while on the South Beach Diet, just keep your daily intake below 75 calories.

One of the reasons the South Beach Diet is so successful, is that you learn how to adapt your own recipes to make them healthier. Phase 1 restricts you to using only canola oil or olive oil, but you will find this actually enhances the taste of your food. You are also advised to use low-fat dairy products during Phase 1, but this is only for two weeks. From that point on, preparing home-cooked meals is a breeze.

Once you hit Phase 2, you are once again allowed to eat fruits and grains. Because of the cleansing your body undergoes during Phase 1, though, you won’t crave these foods like you did before. Your body is now better equipped to process the foods you eat and that will help you continue to lose weight until you achieve your weight loss goal.

The most important question to ask when you are choosing a diet program is, “What will I be able to eat?” You will be more than pleased with the answer to this question on the South Beach Diet. And the weight loss that comes with it won’t be so bad either.
